10.30-11.30 We visit a traditional bakery where they mill corn in a stone mill to make the Galician “pan de Borona” (corn bread) and Galician “Bollu Preñao”.
11.30-12.30 We visit an 18th century bakery and sweet shop that is well-know for the traditional festive specialties like “huesos de santo” a madrilean sweet made at time of the all saints day, “Torrijas” the Easterspecialty or “Rosquillas de San Isidro”. We will hear the history behind these and sample the typical festive sweet of the season.
12.30- 14.00h visit Mercado de San Miguel. This is one of Madrid’s earliest and prettiest markets. It was designed by Eiffel and has recently been restored with flair and sensitivity. Today it is home to a variety of gourmet vendors and stalls, as well as tapas bars each selling their own
specialty. Spain has is the second largest fish consumer (on a per capita basis) after Japan and Madrid boasts the accolade of “the second Fish Market after Tokyo” due to the freshness and high quality of the fish found in the capital. We will visit a fishmonger that supplied from the Galician and Basque coast, by fishermen who practice sustainable fishing. They will take us over the most prized and seasonal catch.
If in season, we will visit a small and picturesque retailer specialized in all Spanish mushrooms. There are a very large variety of regional and much prized mushrooms found in the Iberian Peninsula, with each
region taking a different one as their delicacy. We will visit other relevant stores and finish our market tour with a glass of rioja wine an a tapa of a Iberian ham or a glass of champagne and an oyster directly from the supplier. Our walk will end after the market tour but you may continue your gastronomic journey with lunch at Fuentes y Bonetillo, a charming restaurant that bases its menus on seasonal menus crafted with carefully selected ingredients.
